The best way to get back on track is to add an income or an expense to get your cash on hand to be correct. You'll want to make sure this is a one-time transaction.
Also, you'll probably want to add a category called "Adjustment" or something like that just for when you have to do this (it happens to everyone at some point). You can also include a memo on the transaction to help you remember why it's there.
